Chhena Gaja is one of the most famous sweet treat from Orissa, Northern
India. Chhene Gaja is a rectangle-shape dessert made with sweet sugar syrup and
rose water. Chhena Gaja is soft, sweet, juicy, delicates and melts in the
mouth.

Ingredients For
Chhena Gaja
·
Milk– 1liter
·
1lemon juice
·
sugar syrup – 2 cups
·
Water – 6 cups
·
Rose water – 1tsp
·
Pistachios - 2 tablespoon
How to
make Chhena Gaja
For Chhena Preparation
·
First boil
the 1liter milk, mix the lemon juice and stir the mixture continuously till it
becomes curdled.

Now Drain it
through a diluted muslin cloth and extract the chhena after wash it under running tap water.
·
In Chhena,
drain out the excess of water and mix 2 tsp of flour and knead well.
·
Then, make
all Chhena pieces informing of small rectangular shaped with the help of your
hands and Gather it aside.
For Sugar Syrup
·
First boil
the water in a pan, add the sugar and mixed it well.
·
Cook for
approx 5-6 minutes
·
Add the Chhena pieces to the syrup and lid. Then,
cook for cooking 10-15 minutes.
·
Chhena will
rise and swell. Add 1tsp of rose water
·
Refrigerate and serve chilled.
